Lagundo, Trentino-Alto Adige
Since 1899, the Lagundo dairy has been producing the most varied South Tyrolean cheese specialities and other delicious dairy products from top-quality milk. Every day, the milk is delivered fresh from 52 mountain farms in the surrounding area. These are situated between 800 and 1,500 m above sea level and the farmers are committed to species-appropriate animal husbandry in a healthy environment that promotes the well-being of the animals. Only in this way can the milk meet the high quality standards of the Lagundo dairy, not least because all its products are GMO-free. A speciality among Lagundo's cheese creations is the classic Graukäse (grey cheese), an intensely aromatic sour milk cheese with a high protein content and an extremely low fat content. The whey left over from cheese production is used and processed into a vinegar-based whey dressing. The dairy also produces many of its products in organic quality.
