The artisanal dairy Eggemoa, founded in 2001, is located in the Valle dei Molini at 1,300 metres above sea level. For the past three years, Michael Steiner, a young cheesemaker and cheese taster, has been producing innovative soft cheeses from raw milk. He milks the milk from the hay of his twelve cows that graze on the surrounding meadows. Michael ennobles his cheeses by adding local and regional ingredients such as larch needles, spruce bark and fenugreek, which give them special aromas. In 2016 one of Eggemoa's cheeses was awarded as the best soft cheese in Italy.
