The small pasta workshop in Bolzano specialises in processing old cereal varieties such as dicocco and monococco spelt and buckwheat. The organic cereals are milled several times a week in small batches and used while still fresh. This process ensures that all parts of the grain are used in the production of the pasta, including the precious germ. The gentle drying of organic wholemeal pasta preserves the cereal's intense flavour.
