For over 40 years, the family business Schmid Speck, now in its third generation, has been dedicated to the production of excellent South Tyrolean speck. The business has its headquarters in Plaus, near Merano. The meat, coming from breedings of species and of controlled origin, is processed and refined with the best alpine herbs and spices, to produce an artisanal speck of the highest quality. Smoking, air and time still count among the main ingredients. For smoking, Schmid Speck uses beech shavings, subsequently leaving its speck to mature for a long time in the fresh air. For premium speck, the shelf life is around 6 months, for gourmet speck even 10 months. In addition to their specialty, Schmid Speck also produces juicy smoked beef, herb fillet and other meat products.
