Capriz's "Trüffelo" owes both its name and its unique taste to the four-month maturing period and the refinement with truffles. The semi-hard cheese made from cow's milk has a yellowish-brown rind and a yellowish closed dough with occasional fermentation and breakage perforations, which is interspersed with pieces of truffle. The "Trüffelo" smells pleasantly milky and mildly acidic with fine truffle aromas. The long dough with fine melting tastes milky and buttery and comes up trumps with a noble truffle flavour.
