Under the yellow-brownish rind of Capriz's 'Caprea' goat's cheese, there is a closed white paste with uneven holes following fermentation for three months. The cheese has a milky, finely acidic smell. The supple, elastic paste has a persistent, spicy taste with slightly sweet nutty notes. As the maturation period increases, the aroma of goat's milk intensifies both on the nose and on the palate.
