After 4 weeks of ripening, a fine white mould turf covers the rind of the "Ziegello" of Capriz. Hidden underneath is its white closed dough, which may have occasional perforations. The soft goat cheese smells mildly earthy of mushrooms and has a flowing consistency, whereby the core can still be somewhat firmer and pot-like depending on the degree of ripeness. Light mushroom and goat aroma determine the taste.
