The soft goat's milk cheese "Caprizino" from Capriz is matured for 10 days and refined with ash. This gives it its characteristic black and white marbled rind, which is overgrown with a fluffy white noble mould. A milky, slightly acidic aroma with light peppery notes pleases the sense of smell and in the mouth the "Caprizino" is soft to firm, depending on the degree of maturity, while retaining its fine melting. It tastes finely acidic and impresses with spicy notes and earthy hints from the ash. The goat aroma intensifies with increasing maturity.
