The white mould of Capriz's 'Zigello in Canapiz', which has been matured for 4 months, is artfully decorated with hemp leaves. This aromatic plant is not only found on the rind, but also on the inside of the white, closed paste. The aroma of the soft cheese made from goat's milk oscillates between mushrooms and hemp and its texture is fluid. Depending on the degree of ripeness, the inside may be more or less compact. In the mouth, the hemp aroma is in the foreground and gives the "Ziegello" slight bitter notes.
