The soft cheese "Bierkas" made of Capriz cow's milk is matured for 4 months and has a yellow-orange rind with individual malt grains, which are also present on the ochre-yellow inside. The cheese smells of malt and contains the typical aroma of washed rind. The paste is homogeneous and, depending on the degree of ripeness, can be more or less compact. Just as the consistency consolidates over time, so too does the flavour develop over time and can vary from slightly acidic to strongly piquant. Beer and malt grains give it its typical malty aroma.
