Capriz's "Schüttler" owes both its name and its unique taste to the four-month ripening period and the refinement with Schüttelbrot spices. The semi-hard cheese made from cow's milk has a yellowish-brown rind and a yellowish closed dough with occasional fermentation and breakage perforations, which is infused with aniseed, caraway, fennel and coriander. The "shaker" smells pleasantly milky and mildly sour with fine spicy notes. The long dough with fine melting tastes milky and buttery and is strongly reminiscent of Schüttelbrot.
