Broccoli friarielli in oil.
In the rest of Italy they are known as 'cime di rapa', but for us here in Naples they are 'friarielli'. We process them as soon as they are picked and preserve them in sunflower oil with a little salt, garlic and chilli pepper, ready to use in your recipes.
They are a vegetable rich in water and low in calories, have a high content of polyphenols and natural antioxidants, have good amounts of calcium, phosphorus, iron as well as vitamins A and C. A typical ingredient of Campania's cuisine, they are very versatile in the kitchen and can be used as a pasta or pizza sauce, as a side dish for main courses or as a filling for rustic cakes and pies.
