Capriz's unique soft cow's milk cheese "Giniz" reveals its secret right from its name: juniper berries and Reisetbauer Blue Gin give it its characteristic aroma. After four weeks of maturing, "Giniz" has a yellow-orange rind with a slight mould. Inside, the closed paste is yellowish-white with scattered holes. The aroma is marked by notes of juniper and the typical scent of washed rind. Depending on the degree of maturity, the consistency can be more or less fluid. The taste is dominated by notes of spices and juniper.
