The yellow-orange rind of Capriz 'Sapperlot' cheese, surrounded by a fine mould, conceals a yellowish-white closed paste with scattered holes. The soft cheese made from cow's milk, which is matured for 4 weeks, smells of a washed rind and has a fluid consistency. Depending on the degree of maturity, the inside may be more or less compact. As the ripening period increases, the taste of 'Sapperlot' also intensifies, varying from slightly acidic to strongly piquant.
