The 300 days of maturing, half of which are spent in a natural cave, give the Capriz 'Kasus Caverna' cut cheese, made from cow's milk, a characteristic appearance on the outside as opposed to a creamy, aromatic interior. Its brown to dark brown rind has a rustic surface, which in turn can harbour natural mould. The closed yellowish paste, on the other hand, shows the presence of scattered and irregular holes. The spicy, milky aroma is refined by pleasant hints of cellar ageing.
