Made exclusively from duck liver from Gascony in South West France where the fields are full of geese and ducks grazing peacefully in the widespread green. The liver is soaked in milk overnight and then marinated with Marsala and an exclusive blend of spices, including Atlantic grey salt, Sechuan pepper, Sarawak white pepper, coriander berries, turmeric and cardamom. Steaming follows, with no added preservatives, cream or butter.
