Capriz's "Naturalis in Fiordaliso" is a semi-hard cheese made from cow's milk that is red-smeared and refined with cornflowers and marigolds. This process gives it its unique flowery and colourful rind. This encloses a yellowish closed dough with occasional uneven broken perforations. The cheese smells mildly milky and finely acidic. Its long and creamy paste is characterised by a fine melting and tastes pleasantly milky and buttery.
