The taste of the Ahrntal Valley! Fresh Graukäse from the Moarhof cheese dairy is a lightly ripened variant of the classic grey cheese and has a particularly delicate flavour. The matured rind is yellowish-grey in colour, with a snow-white heart and a consistency similar to dry cottage cheese - this is the hallmark of the original Aurina Valley Graukäse. Its delicate flavour is a delight in itself, but it is just as suitable for adding a rustic touch to more modern dishes such as white wine soup with Graukäse and Schüttelbrot croutons.
Graukäse is a culinary classic of the Ahrntal Valley and is even protected by the Slow Food Presidium. The so-called grey cheese has an exceptionally low fat content of no more than 2% of dry matter. A special feature of this cheese is that it is ripened from the outside in, giving the Aurina Valley Graukäse its distinctive crumbly core.
