Tortellini di Valeggio sul Mincio is a stuffed egg pasta, originally from the area, which legend has it was born in the fourteenth century. Flour and eggs are used to make the pasta. The eggs are mixed with the flour until a soft dough is obtained. The dough is rolled out very thin and cut into small squares. The filling is made of beef, pork, natural flavourings (onion, carrot, celery and rosemary) and wine. At the end of the cooking process, everything is minced and mixed until a soft mixture is obtained. The filling is then placed on the squares of pasta sheet and closed. The tortellini are then left to rest until the pasta is dry.
