The unique soft cow's milk cheese "Hofer's Nightmare" from Capriz is refined with Pineau des Charentes, matured for 4 weeks and its rind finally affinated with Schüttelbrot crumbs. It has a white closed dough with occasional perforations and smells of Schüttelbrit and cognac. Depending on the degree of ripeness, the consistency of the kernel is still a little firmer and pot-like or creamy and flowing. On the palate, it develops a light mushroom and milk aroma, the Schüttelbrit in combination with the Pineau reminds of nut; in the finish, a light cognac flavour.
