Eggemoa's masterpiece is undoubtedly the soft cheese 'Larix', made from raw milk and matured with toasted larch needles. The product has the classic smell of the forest after rain. This is due to the larch needles evoking this natural environment. The consistency is creamy and the taste slightly sour and sweet.
Val d'Ultimo in South Tyrol has three thousand-year-old larch trees that are considered the oldest in Europe. This is evidenced by the number of growth rings that one of the larches had when it split in 1930: 2000.
