The soft goat cheese "Roggenkas" from Capriz is refined with rye bran after 4 weeks of ripening. This gives it its characteristic rye crust, under which is a white closed dough with occasional perforations. It smells delicately of rye and red smear and has a smooth, flowing consistency, whereby the core can still be somewhat firmer and pot-like depending on the degree of ripeness. Likewise, the taste and goat aroma of the cheese also changes with increasing maturity and ranges from delicately acidic to strongly spicy. The pleasant rye aroma is the special something about "Roggenkas".
