The soft goat cheese "Goaserle" from Capriz, matured for 4 weeks, presents itself with a yellowish-orange rind with a slight milk mould. Its dough is closed, may contain occasional perforations and smells of the typical red smear aroma. In the mouth, it has a flowing consistency, whereby the core can still be somewhat firmer and pot-like depending on the degree of ripeness. Along with the consistency, the taste also becomes spicier and the goat aroma more intense with increasing maturity.
